    2 1/2 t  Active Yeast
    1 t  Sugar
    1 cup  Water,Warm, 105-115f
    2 T  Olive Oil
    1 t  Salt
    3 1/2 cup  Flour

In a large bowl, combine the yeast with the sugar and water. Let
stand for 10 min or until it is foamy. Stir in the olive oil and salt.
Add 3 1/4 cups of flour and blend the mixture, incorporating as much
of the remaining 1/4 cup flour as necessary to prevent the dough from
sticking. At this point the dough should be soft and pliable and clean
the sides of the bowl. Knead dough in mixer 5-6 min or until it is
smooth and elastic. Put dough in an oiled bowl and turn it twice to
coat. Cover the bowl with plastic wrap and a kitchen towel. Set the
bowl in a warm place and allow to rise for 1 1/2 hours or until it has
doubled in bulk. Punch it down and divide the dough in half. Roll or
stretch each piece into a 13 to 14 inch circle about 1/8 inch thick.
Transfer the dough to a lightly oiled 14 to 15 inch diameter flat pizza
pan or pizza screen or to a lightly cornmealed pizza peel if you're
using a baking stone.
