    1 Tbl.  salt
    1 1/2 tsp  onion powder
    1 1/2 tsp  garlic powder
    1 1/2 tsp  pepper
    1 tsp  red pepper
    1/2 tsp  cumin
    1/2 tsp  ground nutmeg
    1/4 C.  olive oil

Mix dry ingredients together; rub roast with oil and rub spices in. Place roast in pan and let chill for 8 hours. Cook 15 minutes at 500, then 20 minutes at 375 for 'rare', add 10 minutes for each amount of 'doneness' you desire.
