1/2 C. | warm water |
2 | yeast |
2 | eggs |
1 1/2 C | scalded milk |
4 1/2 C | flour |
6 Tbl | sugar |
1 tsp | salt |
Dissolve yeast in water (add 1 of the Tbl. of sugar to the water)
Beat eggs and add cooled scalded milk; add yeast (which has risen). Sift the dry ingredients and add this to the egg, milk mixture. Stir well, or use a mixer or bread mixer. Put into a greased bowl, cover, and place in slightly warm oven with a glass of water. Let rise for 1 hour or till doubled. Punch dough down, roll out for parker house rolls, spread with butter and fold over. Let rise, covered, until double. Bake at 400 for 10-12 minutes. For 'brown and serve', bake at 275 for 20 minutes, cool and freeze until ready to use. Then thaw and bake at 400 until brown. Makes about 2 dozen.
