1 1/2 C | flour |
1/2 tsp | salt |
1/2 tsp | baking soda |
1/2 tsp | cinnamon |
1/2 tsp | baking powder |
2 | eggs |
1/2 C | oil |
1 C | sugar |
1 C | A-Z ingredient |
1 1/2 tsp. | vanilla |
1/2 C | nuts, (optional) |
Sift dry ingredients, set aside. Beat eggs in big bowl, add oil, sugar and cream well. Add choice of A-Z ingredient, plus vanilla. Add dry ingredients. Mix well. Fold in nuts, if desired. Spoon into greased loaf pan. Bake 1 hour at 350.
A-Z ingredients: Apples, grated; Applesauce; Apricots, chopped; Bananas, mashed; Carrots, grated; Cherries,pitted, chopped; Coconut, fresh ground; Cranberries, chopped, or canned; Dates, finely chopped; Eggplant, ground; Figs, finely chopped; Grapes, chopped; Honey, omit sugar; Lemon, use 1/4 c juice; Marmalade, mit 1/2 C sugar; Mincemeat; Peaches, canned, or fresh, chopped; Pears, canned, or fresh, chopped; Peppermint, use 1/2 C.; Pineapple, crushed, drained; Prunes, 1/2 C., chopped; Pumpkin, canned; Raisins; Raspberries; Rhubarb, finely chopped; Strawberries, well drianed frozen, or fresh, sliced; Sweet potao, grated; Tapioca, cooked; Tomatoes, use 1/4 C sugar; Yams, plain or flavored; Yogurt, plain or flavored; Zucchini, ground or grated, well-drained. **The moister ingredients work better. Add more liquid (juice or applesauce) to batter if using a dryer ingredient.
