Chicken, "Snow on the Mountain"

4 C | rice, uncooked |
6 | chicken breasts, cooked, and cubed |
4 cans | cream of chicken soup |
3 C | chicken broth |
4 Cans | chow mein noodles |
6 | tomatoes, chopped |
2 C | celery, chopped |
1 C | green pepper, chopped |
1 C | green onions, chopped |
2 cans | pineapple chunks |
2 C | cheddar cheese, shredded |
1 C | slivered almonds |
1 C | coconut, shredded |
1 jar | pimento peppers, diced |
Bring 8 cups of water to boil, add rice and stir and cook for abt 20 minutes (or use rice cooker). Combine soup, and broth. Simmer until heated through. On plates, layer rice, chow mein noodles, chicken. tomatoes, celery, pepper, onion, pineapple chunks. Top with cheese, the pimento, almonds, and coconut. Pour more sauce over all, if desired.
