Chicken Salad Sandwiches, Sheri's

3 C | chicken broth, or water |
6 | chicken breasts |
1/2 C | mayonaise |
1/3 C | shallot |
1 tsp | fresh tarragon leaves |
1/2 C | almonds, smoked, chopped fine |
Boil chicken in broth. Cool, and shred chicken. Mix together 1/2 C. mayonaise, tarragon, salt and pepper to taste. Add chicken, and almonds. Let chill for several hours. Spread on to croissants. Or, spread onto 12 slices of bread with no crust, add top (12 more) andpress together firmly. Cut a 2-inch round (with a cookie cutter) from the middle of each sandwich. Put chopped almonds on a flat plate, spread some mayonaise on each round sandwich and dip them in the nuts. May be made 2 hours ahead and wrapped tightly, chilled.
