Casserole, Chicken Poppy Seed

1 Tbl | margarine |
8 oz | sliced mushrooms |
5 C | cooked chicken, cubed |
1 can | cream of chicken soup |
1 C | sour cream |
2 oz | pimentos, drained |
1/2 C | margarine, melted |
1 1/3 C | crackers, crushed |
2 tsp. | poppy seeds |
Melt margarine in a skillet. Saute mushrooms until tender. Stir in chicken, soup, sour cream and pimento. Mix well. Spoon mixture into a greased 2-quart casserole. In a small bowl combine topping ingredients (1/2 C margarine, crushed crackers, poppy seeds). Sprinkle over chicken mixture. bake at 350 for 20 minutes. (you can leave out the mushrooms; double the cracker topping)
