Fish Tacos

1/2 c. | all-purpose flour |
2 Tb. | chili powder |
2 tsp. | cumin |
2 tsp. | coriander |
6 (3 oz.) | catfish fillets |
1 tsp. | salt |
1/4 tsp. | pepper |
1/4 c. | vegetable or peanut oil |
8 (6") | fajita-size corn or flour tortillas |
Toppings: | salsa, sour cream, lime wedges, fresh cilantro sprigs |
1. Combine first 4 ingredients in a bowl.
2. Cut catfish into 1 1/2" pieces. Sprinkle with salt and pepper; toss in flour mixture, shaking off excess.
3. Cook catfish, in batches, in hot oil in a large nonstick over medium-high heat 2-3 minutes on each side or until done. Transfer catfish to a platter; serve with tortillas and desired toppings.
