Breast of Chicken Fiesta

| 1 C | cheddar cheese crackers crumbs |
| 2 Tbl | taco seasoning |
| 8 | whole boneless chicken breasts |
| 4 | green onions |
| 2 Tbl | melted butter |
| 2 C | whipping cream |
| 1 C | Monterey Jack cheese |
| 1 C | grated cheddar cheese |
| 4 oz. | chopped green chilis |
| 1/2 tsp | chicken bouillon granules |
Combine cracker crumbs and seasoning mix, stirring well. Dredge chicken in crumb mixture and place in greased 9X13 pan.
Saute green onions in butter. Stir in whipping cream and remaining ingredients, pour over chicken.
Bake 350 for 45 minutes.
You can make ahead, but don't pour sauce over chicken until ready to bake.
(A little high in fat, but always popular)
