Beet and Onion Salad

| 1 pound | fresh beets |
| 1 C | thinly sliced onions |
| 1 Tbl | oregano |
| 2 Tbl | red wine vineger |
| 1 | bay leaf |
| 2Tbl | chopped fresh parsley |
| 1 Tbl | olive oil |
| 1/2 tsp | salt |
Leave root and 1 inch stem on beets, scrub well. Steam beets and bay leaf for 30 minutes, or until tender. Discard bay leaf. Drain beets and rinse with cold water. Trim off roots and rub off skins. Arrange beets and onions on a platter. Combine parsley, oregano, vinegar, olive oil, and salt. Pou dressing over beets and onions.
