    1 pound  fresh beets
    1 C  thinly sliced onions
    1 Tbl  oregano
    2 Tbl  red wine vineger
    1  bay leaf
    2Tbl  chopped fresh parsley
    1 Tbl  olive oil
    1/2 tsp  salt

Leave root and 1 inch stem on beets, scrub well. Steam beets and bay leaf for 30 minutes, or until tender. Discard bay leaf. Drain beets and rinse with cold water. Trim off roots and rub off skins. Arrange beets and onions on a platter. Combine parsley, oregano, vinegar, olive oil, and salt. Pou dressing over beets and onions.
