Be sure to mix in a little vegetable oil into the chocolate to keep it from getting overheated and clumpy.
    10  popsicle sticks
    5  bananas, cut in half
    2 Tb.  vegetable oil
    24 oz.  semisweet baker's chocolate, chopped
    Toppings:  peanuts, coconut, or crushed vanilla wafers

1. Stick popsicle sticks into cut ends of bananas and place on a baking sheet fitted with wax paper. Place sheet in the freezer.

2. Fill a medium-size pot with approximately 2 inches of water and place on the stove onhigh heat. When water boils, turn heat to low and nest a glass bowl in the top of the pot. Make sure bottom of bowl is not touching water. Add oil and chocolate to bowl and melt, stirring often.

3. Once chocolate has melted, remove bananas from freezer. One by one, dip bananas in chocolate and coat completely. Hold coated bananas above chocolate for a few seconds to allow excess chocolate to drip off.

4. Once a banana is coated with chocolate, hold it above the topping bowl and sprinkle all sides of banana with topping before returning it to wax paper.

5. Place bananas in the refrigerator to set, about 10 minutes.
