Crock Pot - Loaded Potato Soup

4 1/2 | pounds, new potatoes peeled and sliced 1/4 inch thick |
2- 14 oz. cans | chicken broth |
1 | onion diced |
1 teaspoon | salt |
1/2 teaspoon | pepper |
1 pint | half n half |
Toppings: | |
Shredded cheddar cheese | |
Real bacon bits | |
Chopped Green Onion | |
Sour Cream |
Spray crockpot with non-stick spray
place potatoes in crockpot
pour chicken broth over potatoes
add salt & pepper
Cook on high heat for 4 hours or until tender.
Using a potato masher or fork, mash the potatoes against the inside of the crockpot.
Add the half n half, continue cooking until hot, approximately 30 minutes.
Ladle into bowls, add desired toppings, very good served with Sister Shuberts Dinner Rolls.
