Cupcakes with chocolate peanut butter frosting

Ingredients: Cupcakes: | |
125g | butter, softened |
3/4 cup | castor sugar |
1 tsp | vanilla |
2 | eggs |
2 cups | SR flour |
1/2 cup | milk |
Frosting: | |
180g | cream cheese block, softened |
2 tbsp | smooth peanut butter |
1/2 cup | icing sugar mixture, sifted |
150g | milk chocolate, melted & cooled |
1. Beat butter, sugar & vanilla w electric beaker until pale & creamy.
Add eggs 1 at a time besting well after each addition until just combined.
2. Fold in flour and milk gently until mixture is smooth. Spoon mixture into cups.
3. Bake in oven at 180 deg. For 15-20 mins until cooked & golden. Allow to cool.
4. Frosting: combine cream cheese, peanut butter, sugar and stir until well combined. Gently fold through the melted choc until combined. Ice cooled cupcakes. DO not beat or over mix.
