Salsa 2011 | |
1 large | purple onion, finely chopped - I used regular onions! |
6 - 8 large | tomatoes, seeded and chopped |
3 Tbs. | minced garlic |
3 Tbs. | seeded and chopped red chili peppers |
3 Tbs. | seeded and chopped jalapeno peppers, I used all cayenne |
1 tsp. | ground cumin |
2 tsp | dry cilantro |
1 tsp | lime |
1 Tbs | cidar vinegar, (5% acidity) |
1/4 tsp | salt |
1/2 tsp | ground black pepper |
1 tsp | sugar, I added a can of tomato paste Italians herbs instead of sugar |
Directions
Makes 16 1/2 cup servings (2 quarts)
Combine all ingredients and pack in quart jars. Refrigerate overnight prior to use. (This must be kept in the refrigerator until used. It will last up to 2 weeks)
