Ingredients For Crust:
    1 cup  all-purpose flour
    1/3 cup  granulated sugar
    1/2 tsp  salt
    1/8 tsp  ground cinnamon
    8 tbsp (1stick)  cold unsalted butter, cut into 1/2 inch pieces
For Filling:
    3/4 cup  granulated sugar
    2 tbsp  all-purpose flour
    pinch  salt
    1 tsp  finely grated lemon zest
    3  eggs, at room temperature
    1/2 cup  fresh lemon juice
    3 tbsp  heavy cream

-Confectioners' sugar for dusting
Directions
Crust:
1. Preheat oven to 350*. Lightly grease an 8" square glass baking dish
2. In food processor, combine flour, granulated sugar, salt and cinnamon. Pulse until blended
3. Add butter and pulse about 1 minute until dough forms moist crumbs and sticks together when pinched. There should be no trace of dryness.
4. Press dough into bottom and 1" up the sides of the prepared dish
5. Bake the crust until pale golden, 20-25 minutes
6. Transfer dish to wire rack and let cool completely
Filling:
1. Reduce oven temperature to 325*
2. in a bowl, whisk together granulated sugar, flour, salt and lemon zest.
3. Add eggs, lemon juice and cream. Whisk until just blended
4. Carefully pour mixture over baking crust
5. Bake until filling is set but still jiggles slightly when the dish is gently shaken, about 20 minutes
6. Transfer dish to wire rack and let cool about 30 minutes.
7. Run the tip of a small knife along the inside of dish to loosen the crust from the sides, then let cool completely
8. Cut into 12 small rectangles
9. Just before serving, sift a dusting of confectioners' sugar over the bars
