Mom's Cinnamon Rolls

ROLLS:
    2 tsp  yeast
    one pkg  yeast, alternative
    1 cup  warm milk
    1/2 cup  sugar
    1/3 cup  margarine, melted
    1 tsp  salt
    2  eggs
4+ cups flour FILLING:
    1 cup  brown sugar
    2 1/2 TB  cinnamon
    1/3 cup  margarine, softened
Mix sugar and cinnamon in a bowl and set aside with margarine. ICING:
    1 stick  margarine, softened
    1 1/2 cups  powdered sugar
    1- 8 oz  cream cheese, softened
    1 tsp  vanilla

Beat ingredients well and set aside.

For the rolls, dissolve yeast in the warm milk in a large bowl. Mix together sugar, margarine, salt and eggs. Add flour and mix well. **Knead the dough well, adding a little flour in needed. Roll dough into a ball, cover and let sit in a warm place about one hour or until doubled in size.

Roll dough into a rectangle, on floured surface. Spread margarine over dough and sprinkle cinnamon sugar over top. Starting on long end, roll dough in a log. Using a piece of dental floss, sliced into 10-12 pieces. Place on a greased cookie sheet.

Cover and let rise again in a warm place until doubled in size. Bake at 375 for about 16-17 minutes or until golden brown. Immediately remove from cookie sheet, using two forks. (if you wait, the sugar will stick and rolls will be difficult to remove) and place on a tray. Frost with cream cheese frosting while still warm.

**I use a bread machine and dissolve the yeast with warmed milk right in the metal container of the bread machine. Then add remaining ingredients into machine and choose "dough" setting. Check dough after 3 minutes and sprinkle a bit more flour if dough appears to sticky. When complete, roll out dough and continue with instructions.

These take some time to do, but very worth it! I sometimes use 2 bread machines and double the recipe because they are time consuming.
