Deep-Dish Country Quiche

3 Tb. | butter |
4 slices | thick-cut smoked bacon, cubed |
2 large | onions, sliced |
2 | deep-dish pie crusts |
2 c. | halved cherry tomatoes |
2 (6 oz.) pkg. | goat cheese |
2 c. | watercress |
16 | eggs |
1 1/2 c. | milk |
4 tsp. | salt |
2 tsp. | pepper |
1. Preheat ovent o 350 degrees.
2. Melt butter in a medium saucepan and add bacon. Cook on medium heat until bacon is slightly browned. Add onions and continue to cook until soft, about 15 minutes.
3. Divide onion-bacon mixture evenly between two pie crusts. Do the same with cherry tomatoes, goat cheese, and watercress.
4. In a large bowl, whisk together eggs, milk, salt and pepper. Divide mixture and pour into pie crusts.
5. Bake quiches until centers are set and tops are golden brown, 50-55 minutes.
