Crab au gratin

8 tbsp | butter, one stick |
1/2 | cup, (s) onions |
2 tbsp | flour |
1 | cup, (s) scalded milk |
1/2 tsp | salt |
1/4 | cup, (s) sherry |
12 ounce | crab meat |
1 | cup, (s) crackers, crumbled fine |
1/2 | cup, (s) cheddar cheese |
Reserve enough crumbs and cheese for top of casserole. Melt half the
butter. Add onion and saute. Add flour slowly. Gradually add hot milk
and blend. Cook to thickened. Add salt pepper and sherry and stir. Mix
crab meat, crab meat, onion mixture, and extra cracker crumbs and cheese.
Put in greased baking dish. Sprinkle the topping. Dot top with rest of
butter.
Bake uncovered at 350 for 15 minutes.
