Stuffed Turkey Breast

800g-1000g | turkey breast, bone-in |
3 T | olive oil |
Stuffing: | |
1 small | onion, (chopped), |
1 small | cooking apple, (peeled and finely chopped), |
1 tsp | sugar, |
3oz | dried peaches, (chopped), |
1 t | chives, fresh, chopped |
2 oz | breadcrumbs |
1.5 oz | sultanas |
3tbsp | chicken stock |
4tbsp | apple juice. |
Oven GM4/180c/350f.
For stuffing heat 2 tbs oil in a frying pan. Sauté onions for 2 mins until soft. Add apple, sugar, chives, braedcrumbs, sultanas, peaches, stock and apple juice. Stir well. Leave for 10 mins until liquid has been absorbed.
Put stuffing into turkey breast and roll up using kitchen string. Brush with remaining oil and cook for 1 1/2 hours or until cooked through. Leave to stand for 10 mins before carving
Good served with roast potatoes sprinkled with crispy bacon and a mixture of veg.
