Curried BLT Sandwiches

8 slices | oatmeal bread, lightly toasted |
12 slices | bacon, cooked and crumbled |
1/4 c. | raisins |
1/4 c. | cashew nuts, coarsely chopped |
2 large | tomatoes, sliced |
lettuce leaves | |
Curry Spread: | |
2 Tb. | mayonnaise or salad dressing |
2 Tb. | sour cream |
1 Tb. | chutney |
1 tsp. | curry powder |
1/2 tsp. | grated orange rind |
pinch | ground ginger |
pinch | ground cumin |
Coat one side of each bread slice with Curry Spread. Sprinkle bacon, raisins, and nuts evenly on 4 slices; top each with tomato slices and a lettuce leaf. Cover with remaining 4 bread slices.
For Curry Spread: Combine all ingredients; cover and chill. Yield: 1/3 cup.
