Baked potatoes with sausage and Arugala Sauce

1/2 cup | tomato sauce |
1/2 cup | mascapone cheese |
3 cups | Arugala lettuce |
1/2 cup | parmesan cheese |
Bake potatoes in oven, 350 degree for one hour.
Chop onion. Heat pan and sautee onion in olive oil. Add salt and pepper to sautee to taste. Smash and add two garlic cloves to stir fry. Add pork, chicken, turkey or beef sausage to middle of pan. Break it up and stir it into stir fry mixture. Add 1/2 cup of tomato sauce to mixture along with 1/2 a cup of mascapone cheese and melt cheese into stir fry. Add three cups of arugala to mixture. Heat mixture through, allowing the arugala to begin to cook down. Add 1/2 cup of parmesan cheese. Mix all ingredients thoroughly while you simmer.
Take potatoes, slice top and open gently. Spoon sauce mixture over top of potato.
