Balsamic Glazed Salmon

4 salmon strips or steaks | |
3/4 cup | Balsamic Vinegar |
2 Tbsp | Maple Syrup |
1 Tbsp | Dijon, (wine) mustard |
3 cloves | garlic |
Olive oil | |
Salt | |
Pepper | |
2 | shallots |
1 cup | snap peas |
Simmer vinegar, syrup, mustard and 1 clove of garlic. Simmer mixture until it reduces down.
Place 4 salmon strips/steaks. Coat with olive oil and salt/pepper. Place salmon on baking sheet. Put in 400 degree oven for 8-10 minutes.
Chop the shallots and two cloves of garlic and stir fry. Add 1 cup of snap peas to stir fry. Vegetables should still be crunchy.
Add stir fried veggies to plate with one piece of salmon on top. Drizzle reduced glaze across the top of salmon and vegetables.
