Beef & Barley Stew

1 lb | ground beef |
1/2 cup | chopped onion |
1 clove | garlic, minced |
2 cups | water |
1 16-oz can | whole tomatoes, undrained |
1 6-oz can | tomato paste |
1 cup | uncooked barley |
2 stalks | chopped celery |
Salt | |
pepper to taste |
Brown ground beef, onion, garlic & celery in 1 Tbsp olive oil. Drain off excess fat. Add remaining ingredients & bring to a boil. Reduce heat & simmer 50-60 minutes or until barley is tender, stirring occasionally. Break up tomatoes before serving.
