Orange & Chickpea Salad

1 can | Mandarin oranges |
1 cup | couscous |
1 lb | cherry tomatoes, halved |
1 15-oz can | chickpeas, rinsed |
1/2 small | sweet onion, thinly sliced |
1/2 cup | green olives, halved |
1 Tbsp | olive oil |
Salt | |
pepper |
Add juice from orange with water to make 1 cup. Add couscous , cover & let stand for 12 minutes. Fluff with a fork.
Drain oranges, but save juice. Add tomatoes, chickpeas, onion, olives, oil, salt & pepper. Add a little bit of the juice from the oranges. Gently mix & serve over couscous.
