Homemade Noodles

2 cups | flour |
3 eggs yolks, beaten | |
1 | whole egg, beaten |
2 tsps | salt |
1/4 to 1/2 cup | water |
In a large bowl make a well in center of flour. Add eggs and salt. Mix well. Add water, 1-2 TB at a time, until dough is stiff but easy to roll. Divide dough in three pieces. Roll out one piece at a time on a well floured surface. Roll to about 1/8" thick. Gently fold in thirds and cut thin strips. A pizza cutter works well for this process. Repeat with remaining dough.
Place unfolded noodles on cooling racks. Let them dry out. Cook in boiling water for 5-7 minutes or until tender.
Toss cooked noodles with butter, salt and pepper.
