Slowcooker Pulled Pork Sliders with Apple Slaw

Pulled pork: | |
2 lbs | pork tenderloin,, (or 4 lbs pork shoulder) |
2 tbsp | sweet onion, minced |
12 fl oz | root beer,, (1 can or bottle) |
18 oz | BBQ sauce,, (1 bottle) |
Salt | |
pepper to taste | |
Garlic powder to taste | |
Cayenne powder to taste 8 slider buns, lightly toasted Slaw: | |
1 small head | cabbage, coarsely chopped |
1 small | carrot, julienned |
1 | apple, julienned |
2 tbsp | sweet onion, minced |
1/4 cup | apple cider vinegar |
1/4 cup | mayonnaise |
1 tbsp | brown sugar |
2 tsp | celery seed |
1/2 tbsp | black pepper |
1 tsp | salt |
Directions:
Pierce pork with fork.
Rub pork with salt, pepper and garlic powder.
Place pork and onion in slow cooker.
Cover and cook on low for 7 hours or until pork easily shreds.
Drain well and stir in BBQ sauce.
Cook for additional 1 hour.
Mix vinegar, mayo, onion, sugar, celery seed, salt and pepper in large bowl.
Add cabbage and carrots and toss.
Refrigerate for an hour.
Add apple slices just before serving and toss.
Serve pulled pork over slider buns and top with slaw.
