Thai Chicken Coconut Soup

2 - 14 oz. cans | coconut milk |
2 - 14oz | cans chicken broth |
chopped ginger | |
2 stalks | lemon grass |
Simmer above until warm. Add: | |
cubed chicken | |
Simmer until chicken is almost cooked, then add: | |
shrimp | |
scallops | |
a handful of cut mushrooms | |
2 TBS | lime juice |
2 tsp | sugar |
Add Thai chili paste to taste (ok to use dried chili peppers) | |
Chopped jalapeƱos, if desired. |
Simmer about 5 minutes until cooked through. Serve with fresh, chopped basil and cilantro.
