Pasta Noodles

    2 Cups  Semolina Flour, sifted
    2  eggs
    1 teaspoon  Olive Oil
    1/4 Cup  water

1. Mound the flour in the center of a large wooden board and create a well. Beat the eggs with a fork and then begin adding into the well. Expand the well and then knead with hands once it comes together.
2. Knead for 10 minutes dusting with flour as necessary. Wrap in plastic wrap and rest for 1 hour.
3. Cut pasta and let dry for 30 minutes.

Red Pasta Dough – add 2 tablespoons of tomato paste to the eggs
Black Pasta Dough – add 2 tablespoons of squid ink with the eggs
Black Pepper Dough – add 2 tablespoons of fresh pepper
Green Dough – Blanch 1 cup of packed spinach (45 seconds in boiling water) and then plunge into an ice bath for 2 minutes. Drain and dry in a towel. Chop fine and combine with eggs. Stir until as smooth as possible.
