Mediterranean Lemon Chicken Pasta

1 lb | skinless, boneless chicken breast halves |
1/2 cup | lemon juice |
1/4 cup | chicken stock |
11/2 tsp | minced garlic |
1tsp | grated lemon rind |
Chopped parsley |
Cook pasta according to package directions. Cut chicken breasts in half lengthwise and then crosswise three times to make eight pieces per breast hallf. Brown chicken in a large nonstick skillet coated with vegetable spray. Add lemon juice, chicken stock, minced garlic and 1 teaspoon grated lemon rind. Simmer until chicken is tender. Toss with hot cooked penne and parsley.
Makes 6 servings.
