Aztec Vegetable Soup

3 cups | chicken stock |
1 bunch | scallions, chopped |
2 medium | carrots, sliced |
1 can | tomatoes, chopped |
1 medium | jicama, chopped |
6 ounces | french style green beans |
3 stalks | celery, chopped |
1 tbsp | parsley, chopped |
1/2 tsp | salt |
Directions:
Combine all ingredients on a large pot. Simmer over low heat for one hour. Serve.
