Jamaican Coconut Bread

4 cups | flour |
3 1/2 tsp | baking powder |
1/2 tsp | cinnamon |
1/2 tsp | nutmeg |
1 pinch | salt |
2 cups | sugar |
2 cups | coconut, grated |
2 large | eggs, beaten |
1/2 cups | evaporated milk |
1/2 cups | unsalted butter, melted |
1 tbsp | water |
Directions:
- sift flour, baking powder, cinnamon, nutmeg, and salt together in a small bowl.
- stir in sugar, coconut and beat in egg, milk, and butter.
- add water, stir well.
- divide dough into 2 greased loaf pans.
- bake for 1 hour at 325.
