Lemon Chicken

1/4 C | Olive Oil |
3 T | garlic, minced |
1/3 C | white wine |
1 T | lemon zest |
2 T | fresh lemon juice |
1 t | dried oregano |
1 t | fresh thyme |
1 t | salt |
4 | chicken breasts, with skin |
1 | lemon, sliced |
Prehet oven at 400 F.
Cook all ingredients together except chicken (and lemon) in a small pot. Pour sauce into the bottom of a baking pan. Season chicken with salt and pepper. Place chicken (skin side up) on top of the sauce in the pan. Brush chicken with olive oil. Slice lemon and place around chicken.
Bake the chicken for 30-40 minutes or unitl done. After taking chicken out of the oven, place foil loosely over the top and let rest for 10 minutes. Serve with rice.
