White chocolate brownies with raspberries and flamed almonds

125g | plain flour |
1/2 tsp | baking powder |
125g | softened unsalted butter |
125g | brown sugar |
50g | caster sugar |
1 | egg |
1 tsp | vanilla extract |
100g | White chocolate chopped |
100g | raspberries |
50g | flaked almonds |
Preheat oven to 170
Grease and line 16 x 21 cm tin
In a bowl combine flour pinch salt and baking powder
In a large bowl use electric hand mixer to cream butter and sugars until light and fluffy add the egg and vanilla and beat until smooth
Add the flour mixture and beat for another minute stir in the chocolate and raspberries gently so they don't break up
Spread dough into tin and add almonds and bake for 40 minutes
Leave to cool completely in the tin and cover tightly with foil until ready to cut into slices
Can be frozen
