Sweetcorn cakes with avocado salsa

400g | corn kernels |
125g | self raising flour |
2 eggs lightly beaten | |
4 | spring onions thinly sliced |
Red chilli finely chopped | |
1 tbsp | finely chopped coriander |
5 tbsp | milk |
4 tbsp | vegetable oil for frying |
For salsa 1 avocado flesh chopped 10 cherry tomatoes halved or quartered | |
1/2 small | red onion diced |
1/2 lemon juiced
Small handful basil leaves ripped
Put all corn cake ingredients in bowl season and mix
Heat 1 tbsp of oil in frying pan over medium heat cook heaped tbsp of mixture for 2-3 minutes each side until golden and crisp adding more oil for each batch as required
Mix salsa ingredients and serve
