Green curry chicken Ingredients: | |
1 cup | uncooked basmati rice |
3/4 teaspoon | salt |
cooking spray | |
1 pound (1 inch) | cubed chicken breast tenders |
2 to 3 teaspoons | green cury past |
1 (14 ounce) can | light coconut milk, divided |
2 cups | chopped bell peppers, (tri color) |
- cilantro leaves
1. Cook rice according to package, stir in salt
2. While rice cooks, heat skillet over medium- high heat/ coat with cooking spray
3. Sprinkle chicken with 1/4 teaspoon of salt
4. Add chicken to pan/ sauté four minutes
5. Stir in curry paste / cook 1 minute / stirring frequently
6. Stir in one cup of coconut milk bring to a broil/ reduce heat and simmer about 4 minutes
7. Add rest of salt, remaining coconut milk , and bell peppers / cook 3 minutes
8. Serve chicken mixture over rice / sprinkle cilantro leaves
