Pasta sauce- Fresh, no-cook

4 medium | to large tomatoes |
1 bulb | garlic |
1 cup | fresh basil |
1 tbs | dried oregano |
1/2 cup | olive oil |
Core the tomatoes and , with your hands, tear the tomatoes into chunks. Make sure that the juice falls into your bowl, don't discard.
Add your garlic cloves, you can cut them or leave them whole.
Take a sprig of fresh basil and, with your hands, tear the basil into pieces. Add to your bowl.
Add one tablespoon of dried oregano.
Add one half cup of olive oil.
Allow mixture to set at least for one hour. Do not heat, do not refrigerate. Room temperature only. You can leave it alone overnight if you prefer, the longer, the better.
Season with salt and pepper to taste. If you do not eat garlic you can remove the cloves from the sauce, otherwise leave them in.
Serve with pasta.
