Shrimp Salad Pitas

3/4 lb | peeled shrimp |
1t | olive oil |
1/2 | avocado chopped |
1 small | red onion, diced |
1 rib | celery, diced |
1 cup | shredded lettuce |
1 T | chopped fresh cilantro |
3 T | light mayo |
1 | jalapeño pepper, diced |
4 large | wheat Pitas |
Combine shrimp and oil and toss. Grill for about 2 1/2 minutes each side or until cooked. Cool and then cut each shrimp in 4 pieces.
In a bowl combine onion, celery, Lettuce, cilantro, mayo, jalapeño and shrimp. Toss lightly. Divide into 4 servings and serve in pita with avocado chunks.
