Boiled Pumpkin Fruit Cake

500g | mixed fruit |
1 ½ cups | sugar |
1 tablespoon | golden syrup |
125g | butter |
1 level teaspoon bicarb soda | |
1 cup | cold water |
Boil together these ingredients for 20 mins. Allow to cool. ADD | |
2 | eggs beaten |
1 cup | cold mashed pumpkin |
Beat until smooth. ADD | |
1 cup | sifted plain flour |
1 cup | sifted SR flour |
Mix well.
Turn into a deep-sided tin lined with baking paper. Bake in a moderately slow oven 1 ½ to 2 hours.
It’s a moist cake.
