Hummingbird Cake

Cake: Ingredients
    3 cups  self-rising flour
    2 cups  sugar
    1 tsp.  ground cinnamon
    3  eggs, beaten
    1-1/2 cups  salad oil
    1-1/2 tsp.  vanilla
    1 (8oz) can  crushed pineapple, drained
    2 cups  chopped pecans
    2 cups  chopped bananas
Directions PREHEAT oven to 350*F. Combine dry ingredients in large bowl. Add eggs and oil. Stir until moistened (do not beat). Stir in vanilla and pineapple. Add chopped nuts and banana. Spoon into pan. Bake at 350*F for 25-35 minutes. Frosting: Ingredients
    2 (8oz) pkgs.  cream cheese softened
    1 cup  butter, softened
    2 (16oz) pkgs.  powdered sugar
    2 tsp.  vanilla

Directions

Combine cream cheese and butter until smooth. Add sugar, beat until fluffy (little at a time).
