    1  Pineapple, skin removed and cut into quarters, lengthwise
Syrup:
    200ml  water
    100ml  white rum
    100g  sugar
3cm piece of ginger, peeled and sliced
    1 stick  Lemongrass
Zest and juice of 1 lemon Zest and juice of 1 lime
    1  dried red chili
Spiced sugar:
    1  dried red chili
    2 tsp  crystal salt
    3 tsp  superfund sugar

Prepare the syrup by placing all the ingredients in a saucepan and bringing them to a boil, making sure the sugar has dissolved. Remove from the heat and cool, then strain.
