Shrimp and Vermicelli Salad

1 1/2lbs | prawns cooked, chopped |
1 1/2c | celery, diced |
4oz | Italian dressing, Bernsteins only no substitutions |
1/2c | parsley, chopped |
6T | mayo, Bestfoods |
1c | scallions , chopped medium fine or green onions use green parts too |
salt and pepper to taste |
Break vermicelli into 1" pieces and cook al dente, cool. Add celery, shrimp, parsley, scallions, mayo, and about 1/4 or more bottled salad dressing. Add salt and pepper. Matinate overnight. Next day add more mayo and dressing to taste.
