Three Cheese Fondue

1 cup white wine....sauvignon blanc is best | |
1 tbs | butter |
1 tbs | all purpose flour |
7 oz | Gruyere cheese |
7 oz | sharp cheddar |
7 oz | emmentaler cheese |
Bring wine to a boil in a small sauce pan
Meanwhile, melt butter in a medium saucepan over low heat. Whisk in the flour and cook for about 5 minutes, stirring constantly to avoid sticking and burning
Once the flour is cooked, stir the wine into the flour mix. Use whisk to smooth the mixture. Slowly add the cheese, shredded. Transfer to fondue pot and keep over low flame
