Ingredients
    1lb.  mild Italian chicken sausage
    2 (14 oz.) cans  beef broth
    2 (14.5 oz.) cans  diced tomatoes
    1 (14.5 oz.) can  diced tomatoes with Italian seasonings
    1 (10 oz.) bag  fresh spinach
    1 (4 oz.) can  sliced black olives
    1/4 cup  sliced fresh basil
    1 Tbsp.  dried basil, alternative
    2 Tbsp.  chopped fresh oregano
    1 1/2 tsp.  dried oregano, alternative
    1  garlic clove, minced
    1 (9 oz.) pkg.  refrigerated cheese tortellini or 1 cup dried chews tortellini
      Grated Parmesan cheese, (optional)

Directions

In a large skillet cook sausage over medium-high heat until browned. Drain fat.

In a heavy-bottomed 6-quart pot combine, sausage, broth, tomatoes, spinach, olives, basil, oregano and garlic. Bring to boiling. Reduce heat and simmer, covered, 20 minutes. Add tortellini. Cover and simmer 7 minutes for fresh tortellini or 10 minutes for dried. Ladle soup into bowls and serve with grated cheese, if desired.

Serves 6.
