Chocolate Cinnamon Nut Bread

1 1/2 c. | sugar |
1 1/4 c. | all-purpose flour |
1/4 c. | unsweetened cocoa powder |
1 tsp. | baking soda |
1/4 tsp. | ground cinnamon |
3/4 c. | buttermilk |
3/4 c. | vegetable oil |
2 large | eggs |
1 tsp. | vanilla extract |
1 c. (6 oz.) | semisweet chocolate morsels |
1 c. | chopped pecans |
Preheat oven to 350 degrees. Grease and flour 4 mini loaf pans; set aside. In a large mixing bowl, combine sugar, flour, cocoa powder, baking soda, and cinnamon. Add buttermilk, oil, and eggs; beat with a spoon or a wisk until blended. Stir in vanilla, chocolate morsels, and pecans. Pour batter evenly into loaf pans. Bake for 30 minutes, or until a wooden toothpick inserted in center comes out clean. Cool in pans on wire racks for 15 minutes; remove from pans and cool completely.
