Spinach salad

4 cups | fresh torn spinach leaves |
3-5 | crumbled cooked bacon slices |
1/3 cup | chopped onion |
1/3 cup | cider vinegar |
1/2 cup | raisins |
2 tsp | sugar |
Place spinach in a bowl.
Cook bacon, drain on paper towels
Cook onion in bacon drippings for 3 minutes. Reduce heat to medium heat. Stir in vinegar. Add raisins and sugar. Simmer 3 minutes.
Pour hot dressing over spinach. Add bacon. Toss well. Add shredded Parmesan cheese if desired.
