Kugel-Cauliflower with Mushrooms
Nb persons: 4
2 pounds | cauliflower florets |
salt and pepper, to taste | |
4 tablespoons | vegetable oil |
1 | onion, chopped |
4 ounces | mushroom, quartered |
2 | eggs |
1 tablespoon | matzo meal |
1/2 teaspoon | paprika |
1/3 cup | walnuts, coarsely chopped |

Preheat oven to 350 degrees and lightly oil an 8 X 8 inch baking pan.
Boil cauliflower in salted water for 8 - 10 minutes. Drain well and
cool. Place in a food processor and puree, leaving a few chunks. Transfer
to a bowl.
In a medium skillet, over medium high heat, add 3 tablespoons oil and
saute onions 5 minutes. Add mushrooms and continue cooking until mushrooms
and onions are light brown.
Add eggs and matzo meal to cauliflower and season with salt and pepper.
Stir in mushroom mixture then transfer to prepared pan. Bake 30 minutes,
or until set.
