| 1 med. | eggplant, peeled and baked until soft |
| 3 med. | carrots, peeled and shredded |
| 1 | onion, diced and sauteed in oil |
| 2 to 4 | eggs, hard-boiled |
| Salt | |
| Paprika |
Add carrots to sauteed onions, saute until soft - approximately 30 minutes in covered pan.
Combine all ingredients. Blend in blender for 1 minute.
Note great with Almond Crackers.
