Candied Orange Peel

The candied orange peel is sweet and tart all at the same time. You can eat it like candy or use it to decorate other desserts. Makes: 3 Cups INGREDIENTS
    5 large  navel oranges
    2 cups  sugar plus sugar for rolling
    1 cup  water
    1 teaspoon  Grand Marnier

EQUIPMENT
large saucepan
wooden spoon
candy thermometer
coarse sieve

DIRECTIONS
Wipe off oranges and peel them. Spread one portion of the peel at a time on cutting board and holding it taut with one hand, slice off as much of the white pith as possible. Repeat until all the pith has been removed from all the peel. Slice peel into 1/8 inch slices. Set aside.
Combine 2 cups sugar and water in saucepan and boil until mixture reaches 238 (softball stage) on candy thermometer. Add orange peel and Grand Marnier. Stir 15-20 minutes or until almost all the syrup has evaporated. Drain in coarse sieve.
Pour 1 cup of sugar into shallow pan. Drop a few slices of peel at a time into sugar and roll until completely covered. Repeat until all the peel has been sugar coated. Lay on waxed paper to dry.
