Perfect Tomato Sauce

1/4 cup | Olive Oil |
1 | Minced Onion |
4 | Minced Garlic Cloves |
28oz | Peeled Tomatoes |
1/2 cup | Cooked Pasta Water |
Pinch | Basil |
Pinch | Red Pepper |
Salt to taste |
Use a good frying pan and low temperature.
Sauté onions in olive oil on low heat until translucent. Add garlic, sauté for 2 minutes. Add tomatoes, basil, pepper, and salt. Purée into thick sauce. Let sauce sit on low heat until a slight boil. Add pasta water and let sauce thicken. Enjoy with favorite pasta.
