SAUTEED POTATOES WITH BACON

| salted butter | |
| onions |
Boil potatoes until just cooked, drain and cut into large chunks
Meanwhile heat 1 tbsp oil in lare saucepan, add bacon and fry for 4-5 mins. Remove and keep warm
Add remaining oil and fry onions til just softened
Add butter and potatoes and saute until golden
Serve potatoes topped with bacon and sptinkled with parsley
